
Melktert (Milk Tart) Recipe
In molo kitchen we take South African recipes and try them out...for the first time. This is milk tart a traditional South African favourite.
Ingredients:
Crust.
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 cup butter
- 1 egg
- 1/4 cup milk
- 1/4 cup sugar
- salt
Filling.
- 4 cups milk
- 2 tablespoons butter
- 3 eggs
- pinch salt
- 4 tablespoons flour
- 4 tablespoons corn starch
- 3/4 cup sugar
- 1/2 tablespoon vanilla essence or extract
- cinnamon to taste
Crust.
Beat butter and sugar until creamy.
Add beaten egg.
Add dry ingredients with milk until mixture becomes a sticky dough.
Smear the mixture thinly to the bottom and sides of a pie dish.
Do not bake the crust independently.
Filling.
Boil milk butter and sugar.
Mix flour and corn starch with a bit of the milk.
Seperate the eggs and add well beaten yolks to flour mixture and then add everything to the milk mix.
Boil for 5 minutes.
Whisk the egg whites and fold into mix.
Add vanilla and mix well.
Pour mixture over the crust,sprinkle cinnamon on top.
Bake at 180ºCfor approx.20 minutes.
Cool for an hour putting it in the fridge.
